One Pan Any Time Dish

Ingredients

  • 1 1/2 cups diced organic tofu or temple (you can also substitute the soy with egg or chicken)
  • 1 cup cherry tomatoes
  • 1 cup sliced mushrooms (don't forget to sunbathe your mushrooms in the sun 30min to increase its Vit D)
  • 1/2 onion thinly sliced
  • 1 can kidney beans (I prefer the spicy version)
  • 1/2 teaspoon turmeric
  • 1 tbsp olive oil to marinate the tofu
  • 1-2 tbsp avocado or coconut oil to saute
  • Salt and pepper
  • A handful of fresh coriander

Instructions

  1. Dice the organic tofu and marinate in olive oil, turmeric and smoked paprika for 5min
  2. In the meantime, heat avocado oil and saute mushrooms and onion. Add salt and pepper to taste
  3. Next, add the marinated tofu and saute till golden brown
  4. Add cherry tomatoes to the side of the pan and saute lightly.
  5. Lastly, add the kidney beans and heat
  6. Add salt and pepper to taste
  7. Top with fresh coriander
  8. Serve warm
