One Pan Any Time Dish

Ingredients
- 1 1/2 cups diced organic tofu or temple (you can also substitute the soy with egg or chicken)
- 1 cup cherry tomatoes
- 1 cup sliced mushrooms (don't forget to sunbathe your mushrooms in the sun 30min to increase its Vit D)
- 1/2 onion thinly sliced
- 1 can kidney beans (I prefer the spicy version)
- 1/2 teaspoon turmeric
- 1 tbsp olive oil to marinate the tofu
- 1-2 tbsp avocado or coconut oil to saute
- Salt and pepper
- A handful of fresh coriander
Instructions
- Dice the organic tofu and marinate in olive oil, turmeric and smoked paprika for 5min
- In the meantime, heat avocado oil and saute mushrooms and onion. Add salt and pepper to taste
- Next, add the marinated tofu and saute till golden brown
- Add cherry tomatoes to the side of the pan and saute lightly.
- Lastly, add the kidney beans and heat
- Add salt and pepper to taste
- Top with fresh coriander
- Serve warm
