Blueberry Muffin
FOOD AS MEDICINE BITE: Blueberries are not only anti-inflammatory and a powerful antioxidant nutrient, but it also has antidiabetic, cardioprotective, neuroprotective, and chemopreventive (anti-cancer) properties. Blueberries provide us with an outstanding variety of phytonutrients, including stilbenoids like pterostilbene and flavonoids like quercetin, myricetin, and kaempferol. Blueberry anthocyanins are among the most unique of these phytonutrients, and they include cyanidin, malvidin, delphinidin, pelargonidin, peonidin, and petunidin.
Blueberries are a very good source of vitamin K, vitamin C, and manganese as well as a good source of fiber and copper.
Ingredients
- 3 cups almond flour finely ground
- 1 tsp baking powder
- 1 tbsp xanthan gum
- 1/2 tsp sea salt
- 6 large eggs
- 1 - 1/2 cups frozen blueberries
- 1/2 cup honey
- 2 teaspoons vanilla or almond extract (natural)
Instructions
- Preheat oven to 180 C or 350 F. Lightly butter silicon aking cups or line your traditional muffin tin with paper liners.
- In a medium-size bowl, combine all dry ingredients
- In a separate bowl, beat the eggs and then mix in the honey and almond or vanilla extract.
- When your oven is ready, gently fold in the frozen blueberries - but use as little as possible because the blueberries will stain the batter as you fold them in (this discoloration will disappear during aking). Do not over stir the blueberries - you should avoid breaking them because they should burst in your mouth when you eat the finished muffin!
- Bake at 180 C or 350 F for 35 to 40 minutes or until an inserted toothpick comes out clean. Don't take them out too early as they need to ake all the way through. Let them cool before storing it in the refrigerator.
